THE MARIO PASTA! 08/20/2010

Rule of thumb....Always trust a man who wears a scarf made of fine sausage! hahahahaha

Mario Batali Heavenly Penne

¼ c olive oil

5 cloves of garlic roughly diced

Sm-med red onion quartered and thinly sliced

8oz. Good quality bacon or pancetta cut into 1” squares

1 ½ c. grape or cherry tomatoes halved

2/3 cup fresh flat leaf parsley roughly diced

2/3 cup shredded parmesan

2/3 cup shredded romano

1 lb penne

Boil penne till al-dente and reserve ½ cup of pasta water when draining.

In a large pot….add eye of newt…oh strike that….add olive oil over med heat

Saute Garlic and onion for a few…then add bacon…saute until bacon just starts browning and onions get soft

Add parsley and grape tomatoes for 4-5 more mins.

Add pasta to the pot of goodies along with cheeses and pasta water.

Mix together until the heavenly scent says eat!

Serve with nice bread and a bit of extra parm on the side~ oh…I recommend wine too J
